We all know that mods add little to nothing to the value of a car on the open market. Even if you were to de-mod your car and sell all the parts, you'd only recover a small portion of the retail value you paid for them. So why would an insurance company reimburse you for the full retail value of those parts?

Your policy will state ACV less deductible. So that's what you're stuck with. I say this only to reinforce the logic behind having a stated value policy.
