Cooling issue
Check your lower air dam.
T-stat could be sticking partially closed.....not fully opening. 180*F tstat is always better than a 160.

How hot is it where you are......?
Its friggin hot as hell down here right now....and my car has been running unusually hot the past week or two....IN THE DAY. As soon as it starts to cool off a little around 5pm my temps come way down and stay down.
That damn pavement is 150-160 degrees F........in the day time.
I'm not gonna start chasing a problem that isn't really there.....

The pavement is so damn hot.....thats the "cooling" air for the radiator....150-170*F ambient air temps getting scooped up by the lower air dam.
Not good.....Tonight I'll drive around and it'll never get above 185*F in city driving with the A/C "on".

With my BeCool Radiator, I usually am around 190 with the A/C on and 185 with it off. Hottest days I may get close to 205 on hot asphalt.

It is a stock radiator that has quite a bit of miles on it so I think its time for something different. Plus I put a used water pump on it when I built the engine. I have a forged LS6 going in it this fall with an electric water pump so hopefully this whole thing clears itself up with that.
Are you still running your front air dam? Are there any obstructions in front of the radiator (ie, trans cooler, condenser, etc)? A decent upgrade is a stock lt1 radiator as the core is larger but you should be fine with the stocker. The issue is rpms are creating more heat than your system can get rid of with the airflow through the radiator.
I have seen springs in hoses before but never in our cars....did I miss something ???
