Default Exhaust smells like coolant, but...

The car doesn't overheat. I Just replaced the head gasket added a cam, valves, valve seals, springs, pushrods, etc.. The car overheated once, but not for long while I was sorting the engine out, it was a bad waterpump. I replaced it. But now the exhaust smells like coolant. I'm assuming I either warped a head or somehow blew the gasket.

I didn't mill the heads while they we're off which I'm now thinking is my problem. So my plan is pull the heads, get them milled, replaced the gaskets again and button it back together. I followed LS1howto.com's guide which is great. But it never mentioned anything about having the heads milled.

Sound reasonable? I'm not looking forward to replacing the gaskets on a hat trick.
