Catted vs Offroad Longtubes, which would you prefer
If you were to order new longtubes, would you order them off-road or with high-flow cats.... cost difference being an extra $150 for cats. Or would you prefer offroad with resonators?

Depends what sound I was after and what vehicle it's going in. A C5, I'd go with a catted setup because it sounds smoother; an f-body, I'd go no cats to have a nastier sound.
The headers themselves don't have the cats, though, so the question is also whether you'll be running a y-pipe or true duals.

I am talking about a custom set-up for an f-body to be specific. I know what I would do, just curious what you guys would do
For an f-body with a Y set-up

In my opinion, it depends on what catback you plan to run.
Something with a full size muffler like Magnaflow or Hooker, you can get away with not having cats and still be without the majority of the rasp these LSx motors produce.
But if you're running a catback with a resonator (Loudmouth Systems) or chambered exhaust (GMMG), I believe cats are the way to go to keep these setups from becoming overpowering.
I guess there seems to be one exception to this rule though. I know TORCHD 02 TA is catless with his GMMG setup on his T/A. He also has a chambered Powerstick in his I-pipe to tame the rasp.
My $.02.

Pass visual inspection? A resonator can look identical to a Cat, which is the reason why I added offraod with resonators as an option

Catless. Cats are expensive, do not flow well, and can clog up. Why the **** would I pay money to restrict my exhaust flow?
Cats are not mufflers. If you've got a problem with the sound, put resonators in. They're cheaper and flow better.
If you've got a problem with rasp, well, stop running a damn y-pipe. I have cheap true duals that sound great, fit well, rarely scrape, and are all stainless.
