Default thermostat freaking out

While driving, the thermostat gauge randomly freaks out. It goes from normal to buried then back to normal. Then today it went to the cold and stayed there then back to normal. But when it does this, my car hesitates and "bucks". When it happens my check gauges goes on and off, and sometimes the radiator light/coolant light stays on. This is happening a lot! Any ideas?

Check the ECT sensor connector, they can flake
out. Seen what you describe once on a truck. Just
pulling and reseating made it all better.

Now, I never did see the coolant light (it being a
different platform). If you are indeed low on coolant
an air bubble could be another cause, but it would
probably happen on a longer timescale.

Sounds electrical, any coolant issues would not be as abrupt and would take longer to recover.
