Default ls1 gto water temp all over the place

just bought a 04 ls1 gto. the guy drove 3 hrs in the middle of the night to meet me and i trailed it home.

i start cruizing around town having some fun all guages show fine i stop at a buddys house to show him the car. i shut it off one min later water is gushing out of the overflow hose my cars gauge shows in the middle. he runs in graps a scan gauge plug it in go for a ride and car runs 191-207 around town, water was still in sight in the tank. park the car shut it off water rises in tank a inch or so? we let car set and idle for 15min and car runs 217 to 222 then 231 for a split second fans turn on and temp statrs falling 207...

im at a loss after that low coolent light came on and it stayed 191 all night!

i plan on buying a new cap tomarrow. what do you guys think it could b car is from tx

I'm guessing it's a thermostat issue as well, given that it returns to semi- normal... and it isn't a leak issue. The other thing it could be is if you have a air bubble trapped some where inside the line, but I'm leaning more toward a thermostat. They are cheap... swap it out

I'm 99% sure it's your stat, same thing happened to my Trans Am when I first bought it, easy and cheap fix.

Hmm. Your thermo is swapped, what temp is in it? Second, try emptying your radiator. I'd be pulling the water pump and see if it's seized and not circulating. Then. Check for blockage in the hoses or radiator. It's not circulating right is my guess.
