No cats on mine and it still spouts flames through the duals occasionally.
One thing to note, hollowing the cats out is going to create an expansion chamber at that point in the exhaust, which will slow the exhaust gases down, theoretically leading to a slight power loss. Don't know if anyone's actually dyno'd the changes, though, or if they'll even exist in real life with a near-stock LS1.
