Default ? about operating temps and fan settings

ive been going back and forth about installing a 160 thermo....i know its bad in a lot of ways for your engine to run at too low of a temp. Im going to get my car tunned soon and i was wondering if you guys think i should get a 160 thermo or not. I know that when im sitting in traffic and stuff my temp sometimes rises up to 230 but when im cruising it is around 195 but the stock gauge reads 210 always lol......anyways do you guys think i should just leave the stock thermo and just tweak the fan settings or what?

Stock thermostat, fans set to give it cool water to work with.

so i should set the fans off at 190 and on at 200?
