It's not that a 2.5" isn't good enough for more than 512 hp per say, it's just that is the stoiciometric efficiency of that pipe size diameter. Based on how much fwhp you think you are going to be running, you can safely run 2.5" true duals out the back, and through a single full size muffler. That will probably be the quietest setup for a large 408, and what I would run even if you are leaving a few hp on the table.
You could also do a combination: 3" headers into 3" xpipe, then transition down into a 2.5" piping after the crossover when the exhaust gases are cooling down.
