You won't throw a code by gutting the cats. At least you shouldn't.
How do you do it? Remove them, jam an iron rod into them and beat the **** out of them until the honeycomb falls apart and falls out of them

you will absolutely throw a code, your rear o2s will sense your cat is gone and throw a code. the only way to get rid of it is to tune it out, or get o2 simulators which are hard to come by nowadays

If you get one, just call up Vince Trifecta and he'll send you a tuner that'll clear them out for you for not much money. That's what I did when I swapped my gears and did a header install - removed codes and recalibrated my rear end for $100. You plug it into your OBDII port and after 10 minutes, you're done.

Depending on where you live, or how old the car is the studs on the cats are going to be beyond rusted, which means the bolts are going to snap off. You are better off with getting headers and an ORY, and selling the cats.
