i think one fan should work first then if the temperature keep climbing then the other one should work to support first fan.

Just cause the alternator is new doesn't mean its good. Fans running "on high" won't affect your alternator at all if the alternator is good.

Fans ONLY operate together. They also have a low and a high setting.

I think you need to have the alternator checked. I have an under-drive pulley and a normal output alternator and a 1,000 watt stereo amp on my 427ci. When my fans come on when I sit in 95* traffic for 30 minutes, A/C blasting and my stereo on, my volts are always perfect.

Also, no matter how hot it is outside, if you have a 160 t-stat, when it opens up and trades the coolant from the radiator to the engine....your fans should definitely shut off completely for a little bit. Maybe you have a stuck open t-stat too.
