Short of doing a leakdown check....I would remove the t-stat, start the engine while cold and top off the coolant, go for a drive. If it still boils over when you come back from a 30 minute drive....gaskets are most likely what it is.

It could also be something caught up in front of the condensor, making it run hot as *****, then the coolant sprays out the over-flow, then the air in the system later on boils over. But you did say your temp guage always looked good. You could have a bad temp sensor too.
