Because they dont know sh** about N2O or they do business with incompetent. As long as you know the basics(Spark plugs, timing, fuel, tuning, good parts..). You seem to have it covered, do you have a FPSS?..some plp talk crap about it, but this 50$ saved my engine at laest 10times...

Tuning is the biggest killer but Nitrous has its lessons to be learned. I learned mine on a nitrous spike from too much bottle pressure. kaboom, #5 and 7.
It is also very wise to run nitrous filter, specs of dirt can jam solinoids wide open.
On my system I have 3 security triggers, just in case 1 fails.
Throttle trigger, FPSS at rail , and an inboard manual linked to a second pressure trigger (electronic).
Haven't had an issue since. Only drawback is when system shuts don in the middle of a race, but a saved motor is worth a loss I guess.

and some notes...
it only took two turns of the key to start. and it ran idoled 100% like a normal cammed car. with headers it made the whole shop rumble but sounded great with the whole exhaust on.
for some reason my throttle body wont open 100%???? it wont hit the wot switch cus that, anyone know anything about that?
