When doing a heads/cam change do you have to get new head gaskets and head bolts?

You will need a new set of head gaskets.

Ok thank you.
Will these bolts work?

It says they are 5mm longer than 2004-2007 bolts. I am replacing my 241 heads with 243 heads on my 2004 LS1 GTO.

It says they are 5mm shorter than 1997-2003 bolts. So im assumeing since i have a 2004 LS1 i should get these right?

Those look correct to me, but I do not know whether there were any left over 2003 blocks that found their way into 2004 cars. If that happens to be the case in your car, you would know it when you pulled the heads - the head bolts would have the different lengths particular to the 1997-2003 model years.
