So you have a larger MAF, TB, and fuel injectors. The MAF and injectors can cause a lot of problems if they aren't tuned properly. If they are tuned okay, or you are confident those are okay, it's probably something mechanical.
The fact that it will idle when the TB blade is cracked pretty far open means you might have a vacuum leak. That would be the easiest to track down.
Another mechanical option could be a short on a few of the spark plug wires. Are all seated well? Did any touch the header and are arcing? That wouldn't clean up with extra RPMs, but still might be worth looking into.
Another is ground wires/electrical issue. Most of the time, it ends up being this. Sensor gone bad, not seated correctly, blown fuse, improper grounding, stripped wire shorting out, etc. Check the TPS and IAT sensors at a minimum and the wiring going to them, especially if you're using some kind of adapter to connect the 85mm MAF to them.
