What Head Gasket with 383 Stroker I am getting a 383 stroked ls1 machined right now and was about to order a full gasket set from fel-pro. I was just wondering if the stock head gasket is still good with the larger bore?

There are 2 primary variables with head gasket selection - bore and thickness.
For the head gasket bore, this just needs to be bigger then your cylinder bore, and also bigger than your head combustion chamber width.
For the head gasket thickness, this needs to be optimized for the following:
1. Quench distance. Measure how far your cylinders come "out of the hole", then you will know what your quench will be.
2. Compression ratios: SCR and DCR. These will be influenced by your head gasket thickness.
3. PTV clearance. This should be checked, but generally speaking this should not be significant factor in the thickness selection. Gasket thickness ranges typically from 0.040" to 0.060", and if that has a meaningful impact on your PTV then you likely have other issues to sort out.

It will work. IIRC, it's a 3.910" bore x .051" thick gasket. Like someone has already mentioned, your machinist needs to know the thickness of the gasket to determine how much to cut the deck of the block.

He didn't ask what size the gasket will be. Hmmm he is probably assuming stock thickness which is what i have.
