is a 5.3 L33 a destroked LS1?

No. Same stroke. Different bore.

LS1 is 3.898 and 5.3 is 3.70 ish.

Bingo!! But, you can bore a 5.3 out to 5.7 specs. Still the same 3.622 stroke...

After breifly consulting the official Automotive Linguistics Handbook; it has
been determined that "ish" can only apply to measurements of less than .010
You SIR have blatently exceeded such limits by 8 times...but who's counting?
