I'm seeing a lot of variation in the dyno numbers from these trucks

Some do over 300 with bolt ons, some are doing 250 ish with cams and bolt ons.

I think the issue is a lot of these trucks are getting dynoed in 2nd or 3rd gear and some are in 4th. It's skewing the numbers all over the place. That and trucks tend to have all sorts of different wheel combos that can vary in weight a lot more than you will see on cars.
