After reading of some of your issues the last few weeks, why not pay someone to professionally degree your cam and set the proper quench height? They can also measure for you and do the work to get the best out of your combination. You'll already have the heads off. For an extra couple of hundred, a local shop could port match your intake too while milling the heads.
Just a thought, my $.02.

I don't know about anyone else, but when I'm spinning that Lg cam to 7k and I'm rowing through the gears the last thing I want on my mind is the thought of my valves slapping the pistons. It's not that big of a deal to cut them.

I wouldn't cut anything unless it is needed.These pistons are pretty thin to start with.The best thing to do is check the clearence first and go from there.Also make sure you use the right cutter/head to line the valve reliefs perfect with the valve's.
On another note don't forget to port match the intake and clean up all the flashing inside the runners
