Yup, it'll bump your compression to about 10.8:1

About 400 with the 6 speed if you have all bolt ons including a LS6 intake.

will the 5.3 heads leave enough deck heigth for really large cams? or do they do their stuff with smaller combustion chamber size?

Yes you gain the compression without losing P/V clearance such as with decking 5.7's.
