Well, sort of. If you install your springs at 1.800", have 0.600" of lift and coil bind occurs as 1.100" then when at full open on the valve the spring height will be: 1.800 - 0.600 = 1.200" so you have 0.100 distance before coil bind occurs at 1.100". If you now put 0.050" shims under the spring, your new installed height would be 1.750". Thus your new distance to coil bind when fully open would be: 1.750 - 0.600 = 1.150" and since your coil bind occurs at 1.100" you are 0.050" away from coil bind.

By the way, shims only come in 0.015, 0.030 and 0.060" so you can't get exactly 0.050" shims in the example above.

Don’t use the advertise info.
You need to remove the springs and compress them to get an actual measurement of Coil Bind.
Let say your Coil Bind(fully compressed spring) measured at 1.090, then add your actual lift of your cam and .050.

Let say you have cam with .600 lift
Coil Bind of 1.090,
Plus .600
Plus .050
Equals install height of 1.740

So can installed height vary? I would have thought it was limited by the length of the valve stem. What is a spring's installed height on stock style heads without any shims?

Whenever you have a valve grind, the valve sinks into the seat deeper, and the heigth of the stem changes. When they are new, there are variations. They are close, but it is good to check each one to make sure that one or two are not longer, or shorter would be worse.
