Well I'd say its mainly for press reasons. Notice its gotten a good bit of ink written about it in the media, compared to many stroker LS1s.
A stock 5.7 with a stock 4.8 crank is like 311 ci.

First off, let's answer the question, why did people make 302ci motors that revved to infinity? Same as Nascar. Class restrictions. People did as much as they could to squeeze out more power with a smaller displacement engine.
Why do one now? Nostalgia.
What cam would I do? I think you would need a solid roller to reliably buzz a car up to 7500 rpms on the street. I'd do no less than a 250/250 duration with a solid roller for NA. But I'd look into 260/270/112 stuff.

In truth, there are a lot of people who are contracting Westech to build those 302s for their own use. It is a bit nostalgic, but it is a fun car to drive. I drove it on the PowerTour for a bit.
