First to answer the question at hand;
I would go with the smaller valves. I dont think that larger valves have been proven to add any appreciable power, and larger valves weigh more. Valves that weigh more float or bounce earlier. If you arent going to go stroker soon, Id stick with 2.02 or in some cases 2.05.

Now... as to what heads to use... I think A) the decision was made (so who cares?), but B) I dont think that if I was in Michigan, where I could drive my car to ARE, I would have any of the problems Ive had. I would have just dropped it off with them along time ago, and I have no reason to believe that I wouldnt have gotten back a very well working car. Its been extremely difficult to work through problems when I am thousands of miles fom ARE. I would give, in the future ALOT of weight, personally, to having the shop nearby. Also, I did alot of new/on the edge stuff. Sounds like BlSu is going with tried and true LS1 stage 2 heads.
As far as the cam/heads difference, I have ARE heads and a Hammer Cam from MTI. If folks want to get into designing cams specifically for flow #, they need to just get the flow #s for the heads and find the best cam for their purposes. This is a pretty well known science, and although it might help alot to have vendor experience behind the question, it isnt vendor dependant.
