The stock valves are fine if you do not wanna spend the money to upgrade. Simply put a back-cut on them to remove the lip and get a quality valve job. There really is no "black art" to porting these heads, just take your time and do not change the shape of the port if you are not familiar with flow dynamics.
I know that many different people have all kinds of things to say about porting, some of it true, some of it not. I have been doing it for several years now, and will admit that I do not know everything. But I do my own, and many others and have yet to use any aftermarket valves, and with a full weight 2000 SS, run 116mph with a auto and a "crappy" hotcam. So, before you spend all your money on something that may or may not make a difference, shop around and ask questions.
All your power IS a product of how well your heads work with your combo.

I have heard of people fitting 2.055/1.60 on stock seats, but you have to pay real close attention to the valvejob. Personally. the biggest I would go is 2.02/1.57 on the stock seats.

most porters can make the head with that little stock 1.55 exhaust valve flow more than you will ever need. so its not really a concern. the shape/design of the valve is more important..some are gonna be better than others on these heads

I was unaware that the 01 valves were any different. GM changed the valves in 99. The new ones aren't backcut, but just straight. The older ones were actually got fatter at the valve head area!
