What makes a head good? Why are some heads really expensive and others cheap?

What makes a head good? Why are some heads really expensive and others cheap?
I'm trying to pick out a set of heads now... but i'm not sure what to look for.
Do you look at flow over various lift of the intake and exhaust ports and that's it?
What is it that makes the big name companies (GTP, ARE, etc...) cost so much money? Is it mostly the name or is something special done to make them work better?
I guess the thing I don't understand is, if a given port will flow xxx cfm on 2 different heads ported by different porters, how do you tell which is better (is there a way to tell other than putting it on the car?)
Does the angle they port at make a difference? If so why? If xxx cfm of air can flow through at .100 lift and yyy cfm at .zzz lift between 2 heads, and they flow very similar from 0 to .600" lift , given same compression, wouldn't both heads produce the same power? (assuming this was true for both intake and exhaust of both heads)
Thanks
Mike
