Default 6.0L Iron Block, .030 over, stock LS1 Crank

How many cubes would this give me?

If I fly cut the pistons does this lower the cubes very slightly? Does it lower compression?

flycutting gives you room for valves opening (i.e. your cam is so big in lift AND duration that the valves are hitting pistons). it does lower compression slightly. most valverelief's are between like 2cc and 5cc I think.

Total displacement would be 370 CI with 10.3:1 compression assuming LS1 heads and stock gasket.

well, your compression will vary, depending on your head/pistion combo. mine w/ .030 milled heads and -.2cc valve reliefs came out to ~11.2:1
thats w/ a 6.0 metal head gasket.

flycut pistions wont lower the cubic inches any, but you will need a/m pistions with a .030 over block anyway.

See "CarMath.com" for the formulas needed to calculate CI, CR, etc....
