Are the plugs out when you spin it? How are you determining no pressure?
When I did my heads, new lifters, I didn't touch the pump. I spun it with no plugs and it took about 30 sec of cranking with the starter to register on the dash. It would take even longer to get up on top of the heads. I always use a lot of Redline assembly lube on the valve train for that reason, it is the area that will starve the most during a dry start so if you don't see it there I wouldn't assume something is wrong just yet.

When I did my cam & oil pump swap, no matter how long I turned the motor over, it wouldnt make any oil pressure, but as soon as I plugged the coil packs in, and fired it up, it shot right up to 60psi

I just got mine fired up again now its got oil pressure but only 30psi cold at idle and it hardly increases as you raise the revs. The pump is a ported LS6 pump but not shimmed, maybe its time to swap it for a mellings?

I wouldnt like to think that, the motor has about 50 minutes on it from a full rebuild with .002 bearing clearances all round. I looked at the cam bearings from underneath when the sump was off they all looked to be in place, I didnt change them on advice from the machinist saying aftermarket ones come loose. Only thing I can think of is the pump is not up to the task the pump has about 50k miles on it.
