Default about to switch to synthetic. what weight for texas heat?

I know things like this get asked alot, but there seems to be a million different answers. But alot that I have found were asking for cars that had over 70,000 miles.
Anyhow my engine has about 37,000mi on it and I'm about to finally switch to synthetic. What weight oil would be best for this engine with this texas heat and what would I switch to in the winter?
Not sure if what type of engine I have changes anything but its all in my sig. Also I have heard of German Castrol 0w-30 being good, but is the weight good for this heat. Thanks for any help.

Call and talk to your engine builder rather than get those "million different answers" off the internet.
If you built it yourself then what are your bearing clearances like?

My engine builder built it maybe 2 1/2 years ago. So I have no idea how he would still know. What would he need to know in order for him to know what the bearing clearances were like?
