Default Normal LT1 operating temps??

I recently had two head gaskets replaced on my Lt1 Trans Am, I never really payed attention to my temps before my gaskets shitted out on me so I don't know what the temps are supposed to be at. They seem to get very hot like between 210 and 240, its will hang around 240 for about 1 minute and then drop to 210, it never drops below 210. Also I have a 160 degree themestat and the best dexcooland (red), are these normal temps for my car? It goes from 160 to 210 after 15 minutes of driving.

210 is the normal operating temperature. Did you have you car tuned for the 160* thermostat? if not it is still running like it has the 180* thermostat in the car. You have to have the fans set to turn on earlier for the 160* to be worth anything.

Moving back and forth from 210-235 is normal operating temperature. Get your fans reprogrammed and it will run cooler.

What is the stock temps that the fans turn on at, when I order my pcm for less tune do I need to let them know I have a 160 degree thermestst? Also how does a tune help the stat keep it cool?

Stock fans aren't supposed to turn on until 226 degrees (low speed) and 235 (high speed) degrees.

All the thermostat is is a valve that allows coolant to flow through the motor. At 160-degrees, it allows coolant to flow sooner than the stock 180. All the lower temp thermostat does by itself is make your engine take longer to warm up. If you have the fans programmed to come on at 160-degrees when the valve opens, the heat exchange happens much sooner than stock, keeping temps much cooler.

If you have your fans programmed to come on at 160°, they will always be on. No reason they have to be and no need to waste HP generating the power to run them (it wouldn't be good for winter months, either). If you have them programmed around 185°-195° they will hardly even need to run when you are going down the road.

Yes, just them that and they will set the temps accordingly. It won't turn the fans on a 160, that would be a bit silly. But they will turn them on earlier. For example, mine are set at 170 & 180, respectively, by madz28. Never runs hot, even on 90+ days.

I've got a 160* untuned, riding down the road it stays just over 160.

When I sit for a while like in traffic or something it fluctuates between 210-225.
