The 210 heads will fit an LT1 engine but you need the LT4 intake to go with the heads..

You don't need 210s for a 383 to perform well. Downside of the 210s as they said is you need an LT4 intake (rare and expensive, maybe $500), an edelbrock lt4 intake which has a tiny plenum and flows horribly, a single plane converted with either a very sharp elbow to clear the stock hood which won't flow well NA (fine for boost), a big elbow and a cowl hood, or a custom sheet metal intake.
Or you can get your stock lt1 castings ported, like the AI200s and they flow almost as much, you can use your stock intake, and still make 450rwhp. Or trickflows ported, or AFR195s.

I got a LT4 intake for $200. The powdercoat was a little chipped and I had to drive to New Jersey to get it (gross). I'm just using it to break in my motor.
You don't necessarily need the LT4 to seal the 210 ports. I know there's a guy on here running a stock LT1 intake with the AFRs although there's probably around 1mm or less of gasket seal.
Another thing you might encounter with the 210s is the need for offset rockers. I went with Isky guideplates (had to grind to clear head bolts) and Harland Sharp 0.050 offset rockers to get alignment perfect.
