I'd say leave it alone, doubt you'd see a dyno difference honestly, and in the summer in TX 160 or 180 stat doesn't amount to a hill uh beans. Adding a big dual 1" core radiator kept me @170 with the AC on sitting in Houston traffic.

See this is where my confusion kicks in....are you sure that was your stock stat or maybe someone had changed it before..i dunno just a thought
In the winter my heat doesn't ever get warm like it use to since 160 degree thermostat and fans. That is because it never gets warmed up enough to pump out good heat. I decided the stock setup was too much for me awhile back when I was sitting in traffic on a mild spring day and I was almost getting to the peg on the temp guage which is very bad for your motor.
