Stick with LT1 or go LS1?

For the money you would spend on something like that just doesnt make any sense. If you want an LS1 buy a car that has one and go from there. Otherwise just rebuild the LT1 get a great set of heads with a good cam and you could pretty much have the same thing. LT4's are pretty much equivalent to LS1's.
LS1's its really no secret, they are better motors in their stock forms. And most of that comes from their better designs with respect to their heads.

If I had it to do all over I would just buy the LS1. I mean I've thought about the 383 and I too like the look of the 94-97 but the pita tune up and the opti issue is enough to make me go for the LS1 next time.
