If the sensor is like the other GM cars I've worked on, they have a fairly wide o-ring type gasket that keeps it tight in the radiator port. If that is damaged or old, I could see it popping out. Again though, I haven't taken one out of an f-body.
I will be taking mine out soon, as my light comes and goes as well. I'm definitely not leaking any coolant, rad is full, as is the overflow, so thats not the problem. I'll be taking mine out and cleaning any gunk off of it and cleaning the electrical connection, see if that clears it up. If not, I'll just replace it eventually, low priority. I just watch the temp gauge myself anyways.

its under alot of pressure once it heats up so just a O-ring is not sufficent to hold it in place but there is also a wire C-Clip to keep it in place, maybe you don't have it on there?
if your also getting a low coolent light on you might have to blead the system.
mine was doing the same thing and once I blead it no more light.

have to drain 4-5 inches out.....or just pull the sucker and let it spurt out and drain itself....cover the engine with a garbage bag/tarp/plastic....let it drain itself..thats what I did..easier than undoing hoses that may leak after re-attaching them possibly.
