I am in process of finishing my 70 camaro restomod and its time to pick a clutch . Car will weight around 3000-3100 lbs it has a built 6.0 ls that should be in the 500-550 hp range to the tires backed by a stage 2 built fbody t56 transmission. It will be a play car that will get driven on weekends and to shows ect. Will a luk ls7 clutch be an option or should I be looking at something more aggressive?
That's about at the limit for a LS7 clutch. I like my Diamond Stage 2 from Texas Drivetrain Performance. It's organic on one side and ceramic on the other. It has good holding ability.
I ran an LS7 clutch for years behind a 525rwhp turbo car and it never missed a beat. If you are trying to save some money, that's what I would use. I just put in a Tilton organic dual disk clutch for added capability but it doesn't drive nearly as nice as the LS7 clutch did.
I have a healthy cammed 6.0l in my MCSS, 243 Heads LS6 Intake. I built the T56 in it, car is 3500lbs full tank of gas without me in it. QP Custom 9" with 3.89 Gears, Probably a hair over 400hp at the wheels with this build.
I had the LUK LS7 Clutch Kit in it and absolutely murdered it at the track on a 4K RPM launch, on street tires. Got one pass in at a 1.93 60ft, pass #2 the Clutch put it's notice in. I use a Monster Stage 3 now, and it's solid. That was my experience.

For a play car, weekend shows the LS7 clutch will work just fine. I run one in my 72 A-body wagon with the same usage your looking at. I'm nowhere near your power estimate, but I beat on it pretty hard and it has always worked great. Lots of great advice above on other options, but for the money, for your application, LS7 is fine.
I’ll let you in on an industry secret. That McLeod one above, the diamond stage 2, summits 12” clutch, ram’s 12” clutch, pretty much all 12” clutch’s on the market that have a metallic/organic disk are exactly the same. The pressure plate is a different color, but they are all the same clutch.
