I think you meant powershifting, when u said double clutching...
Double clutching involves the following , in sequential order
engage clutch, put from current gear into neutral, let off clutch, reapply clutch and engage into what gear you desire.

Double clutching simulates the engine RPMs falling during a normal upshift. You rev everything up so the RPMs fall down just as you shift into the lower gear.
