I have been reading about this and still don't understand what they are or how they effect the motor. I have an 07 5.3 does this stuff effect me when upgrading the motor

DOD(displacement on Demand) and AFM (active fuel management) are the same thing. They are when 4 of 8 cylinders are deactivated in order to acheive better fuel economy.
VVT is variable valve timing. When an actuator in the cam gear is used to advance or retard the camshaft.
That is the basic idea. There is alot more to each system as to specifics on how they work.
