The hardest part about doing this besides the possibility of a humongous explosion, would be figuring all this crap out. You'd obviously have to go wet, I'm sure the maf couldn't adjust in time like stated earlier. This leaves you with trying to figure out how much LOX would be equivalent to the same amount of nitrous and then trying to get the jetting right on the fuel side. This would take multiple dyno/track runs and many hours tuning it to get the A/F dialed in. You might get lucky once testing it out, but multiple times I doubt it.

iono if the rate is gonna be the prob as much as the fact that air is 20% oxygen and lox is 100%. The MAF works on Mass Flow, based on about 20% oxygen even though oxygen content changes from like 15 to 30 percent. but a difference of over 60% would be unable to be acounted for and would produce a big ole explosion. in other words use the biggest fuel jet you can find and the smallest lox jet.
