What guage wire is the correct size in wiring a nitrous system? and can it be uniform throughout or should different accessories have different guages ?

Depends, signal wire id prly use 18awg, for solenoids i just use 10. Bottle heater i use 12awg minimum.
12awg is good for a solid 25amps. Thats most bottle heaters, solenoids are usually abou 8-10 for nos and 2-5ish for fuel.
Signal wires just get too bulky is bigger than 18awg.

Im mainly concerned about the switch panel. I think I read that if the guage is to big it would get hot and the last time I wired it up, they definantly got hot after a few minutes

I am not sure on your switch setup, but if they dont use a relay and are high current switches then you have to use the appropriately sized wire. Most switches use relays so its just a signal wire at that point. The purge switches dont(at least mine havent in the past) so i run prly a #14 to that.

I run a single stage wet kit. I had a MSD WS but I sold it and got Dave's WS. I run one of Beer's switch panels and also have all of the accessories except a bottle opener.

FYI, some nitrous noids from NX will draw up to 30 Amps. Personally I would use 12-10 AWG wire for those but if you have 14 AWG from the factory, dont worry too much because the duty cycle"The time on" on most noids and wire are very low most of the time.

Yes for non automotive applications such as wiring houses. The primary wire can handle higher current slightly. I wouldnt blink twice in using 12AWG for 25A with PRIMARY automotive wiring. Primary automotive type stranded wire has more fine strands increasing overall area of the copper. 10AWG prly 35A. You also have to keep in mind how long this wire will actually be drawing that amount of current. Maybe 15-20ft.
If you have a noid pulling 30A, first of all id be amazed, secondly if i found it to be true use 10awg.
I have two nitrous solenoids and two fuel and they combined are like 25-27 amps, i feed with 10awg. 12awg would be marginal.
