Default Pe commanded AFR help

I have my commanded AFR hi res on my display for the 1st time and have it commanded for 12.7/1 at around 62mph it drops to 11.7/1 what would cause the commanded AFR to change I thought in pe mode that was locked in I understand that if my ve table is off my afr could fluctuate but what I thought was the commanded should remain what you ask for I have hp tuner and am running this car at the track trying to dial it in and noticed this today

Check COT protection, that will come on "randomly"
after a high-load interval and then will always be
"lurking" waiting to dump fuel on you after any more
high-throttle.

what are the risks of disabling cot at the track or just raising the values is there a place to know if it was activated reveiwng my run

I always run COT off. Even when I had cats.

COT always seemed counter intuitive to me. The new LT1 motor is setup to inject fuel in on the exhaust stroke after start up to heat the cats faster but the COT protection adds fuel to lower their temps....
