battery removal, loose tuning?
If you remove the battery from the car for 3 months for winter storage, will you loose the tuning done to the car with ls1 edit, or does the pcm store it no matter what?

PCM uses flash memory, which is nonvolatile. Stick it on the shelf for a couple years, it's fine.
Battery removal won't impact the programming in any way.

what will disconnecting the battery do then. I've heard of people saying for example, when you add an air lid, pull the batter for 10 minutes to reset the pcm?

"resetting" the pcm is a whole different thing, and don't know that just disconnecting the battery will do it like the old obd-1 pcm's. the idea of resetting the pcm is to essentially brainwash it from what it has learned previously.
