Nah that's pretty real world.
PSM trapped 127 on a stock 2007 GSXR-600 in normal air, nothing spectacular, and he's nowhere near magazine rider weight.
I trapped 122 on a ZZR600 with only a jetting change (maybe 3hp) and i'm not especially light either. Had good air, but being only a few mph off that trap speed with about 12hp-14hp less than a GSXR, R6, ZX6R, etc shows that 126+ is pretty easy to achieve for real world rider weight/conditions.

As Beans said, I trapped 127 at LVD (and almost 104 in the 1/8), which is a less than stellar track. In fact, I trapped 126 multiple times at LVD in a +2000 DA, and that was while I was still learning (hell, I'm still learning and improving as I've only been to the strip 3 times on a bike - I just learn quickly ).
"Perfect conditions" down at a better track like the ones in NJ would yield more impressive results. I don't doubt I could hit 130 on a cold day at Atco, but until I do, I guess we'll never know. I plan on going down end of this year when the weather's cold just to find out.
And this was on my bone stock 2007 GSXR 600. I weigh about 180-185 in full gear. My bike is the same "model year" as the 2006 from the OP's video, only I'm stock (06 and 07 GSXR 600's were the same bike).

It's really not that simple though. The bike gains a lot less MPH on the back half than a car that traps the same, so you can't compare traps between bikes and cars like you can between cars. A well ridden stock 600 will pull a car that traps 130 pretty hard from a first gear roll. From 55+ where the bike is in second gear it's a very close race and the car will eventually pull up top. A stock 600 will trap 125-129 depending on the model, rider, DA, etc. From a 40 roll it doesn't look anything like the trap speeds indicate. From a 60 roll it'll be very close.
It takes a 135mph car to beat a 600 with a rider on it from 40mph, unless passing the bike at 140+ when it's out of steam counts as a win.

Thought it was relevant that the bike rider made these posts on another forum in his thread with the video:
I started in 2nd gear. Probably should've started in 1st but I'm not experienced with pulling the front wheel up at all lol.
This was the first time I've ever raced on a bike so I definitely have a long ways to go and yes my shifting is lazy as hell right now.

This is the reality in most cases. Car guys believe a rider to be experienced based on ownership and perceived abilities, but bike riders mostly don't know what they are doing. Hence, bolt on F-bodies beating 600s. I will tell you, I raced a CBR600F4 back when I first got my car in 99 so the bike was probably brand new too. We would race from 50 and I would try to get the jump on him. He would always end up pulling away without a problem as soon as that thing was spun up, and those are quite a bit slower than a new 600.

Bikes are extremely rider dependent.
First time ever down the strip on the ZX6 in sig, when it was stock, was only an 11.3 @ 122mph but I had no track experience on a bike. Magazines were getting 10.7s so I was pretty bummed by being half a second slower on the same bike and in great air. Three years and a few bolt-ons later by the end of the day trapped 131, stock height/wheelbase with the front strapped. Super shitty 1.9 60'. -1/+2 sprockets, X-TRE, tuned PCIII, BMC race filter, secondaries pulled, no cat, GP pipe, etc. Weigh ~165lbs, DA was ~150...blessed by two ~sea level tracks within an hour and a half of me...
Terribly difficult to launch a stock wheelbase bike at the track, I have been riding over 10 years and it was still a PITA to find the line between yanking the front or bogging. 600s make **** torque so the launch is especially difficult.
New ones are a lot faster, doing close to my modded times stock.
