Based off of your old C6 vs the 466rwhp pullied cobra and how close it was, I'd say the z06 is going to roll out because:
The z06 is lighter than the C6 by about 100-150lbs and (pending drivers weight) is roughly 550+/- lbs lighter than the Cobra.
The z06 is making more peak power than your C6 did
The z06 has more aggressive gearing (from what I remember, but I could be wrong and your old C6 could have had the Z51 sports package.)
The LS6 is a very rev happy motor and pulls like a freight train top end, especially now that its got some breathing room (exhaust/intake).

I voted Vette BUT:

What kind of race? Maybe I missed it, but I did not see how long it was. On a short race the Cobra is very very competitive here IMO. And its got the power to stay close up top too. I suspect that IRS brace helps the Vert launch pretty well.

So driver skill is a big variable here.

Noway the Cobra beats this Vette, I say it will be kind of close at first with the Vette pulling and then it will get nasty up top.

My SS with 50 more rwhp than the Vette put the hurt on a 03 Cobra from a roll with right at 500 rwhp. I just think the Vettes going to easily win this.

well if they can both drive the z06 would have a good advantage just do the power to weight ratio. It might be close at the start but when they hit 100+ if they do the vette will start pulling pretty good.

If you dont have one already an oversized heat exchanger seems to make a difference on the cobras.

You ran the bone stock C5 Z06 and posted up the video. You barely pulled him from a roll. Now you are up against a Z06 with about 40+rwhp more. You will lose given the driver is decent and you haven't done any power mods to your car

um a factory convertible cobra weight 3780 lbs and factory z06's are 3080 lbs and the z06 has a weight reduction also so you are looking at more then 700lbs because of the weight reduction.
