How "adjustable" is the Koni/Strano setup?

The funny thing is.. I keep seeing a lot of the drag racers recommending against using QA1s and using other types of shocks for drag racing applications. I only gather this from what I've read, but seems like QA1's are pretty useless for all applications.

I wouldn't go that far. For drag shocks, I would recommend them. Don't get me wrong on any of this; the QA1s are pretty good on the street. Just not great. They are a million times better than stock for handling and with a softer spring, they feel pretty good. Stiffer springs, and you'll feel like you are putting on a show with hydraulics! They need springs that are at least as soft as stock to work how they were intended.
