Yes it's all good now back to stock height now which is nice for those sipped bumps.

yikes lol, I'm going to be getting new shocks/struts installed soon, is this something that I should warn the installer about or is it such a blatantly stupid mistake that it probably wouldn't happen (not sure if the person who is doing it has worked on f-bodies before)

Well until it happened I thought it was pretty much a no-brainer, especially when you have the existing assembly right there in front of you.
