Pork ribs - Brown sugar, cayenne pepper, fresh black pepper, tony chacheres, salt, chopped onions and minced garlic, rub down and wrap, smoke for 4 hours (give or take)

Beef ribs - haven't done in a while but when I did it was wrapped up with zesty italian in the wrap, plus salt, pepper and tony's...

Since you are in Austin I would recommend heading to the local Randalls or HEB and picking up some Salt Lick Dry Rub.
