Depending on how far the valves are out of adjustment that maybe why its not idling. (rocker arms)

Like I said above the worked 650 DP worked more than well on a 383 was fine tuned like nobodys business IMHO 850 is a tad too big maybe 750 but depends on how much fuel that motor wants street or strip?

i say go with a 750 the reason why it wont idle at a normal rpm is because the engine isnt moving enough air to create a good signal down low

I would have a hard time believing the carb is too big, I would believe that just b/c it's a Demon it doesn't idle worth a crap. Then again I ran a 830 Holley on a mostly stock 400 Pontiac before.
Do you know the cam spec's? heads? what type of intake? comp. ratio?

I dont think the carb is that much oversized I used to run a 600cfm holley dp on a 13b rotary engine it would idle all day long motor only made maybe 220hp. Same thing on my old Jeep Cherokee the big ones with the 360s I had a 600dp on it hell I even ran a adapter and kept the factory 2bl intake on it ran like a champ! I bet you need to get your rockers adjusted correctly thats prob cuasing your issues or a few minor problems cuasing big ones! Back 10 yrs ago when my dad and I rebuilt the 305 I had in my elcamino we had to readjust the rockers after we got it running it HELPED tremendously. If you were closer Id lend a hand!

I would like to help. Im not a top mechanic but but I did mine. Sucks about the distance. Have you made any attempt at all with just a basic manual. Fairly simple with instructions. Ill be in Fort Worth for Goodguys if you can wait that long lol. Good luck bro.

Is it a hydraulic cam? Easy but messy:

With the car running and ONE valve cover removed, loosen the rockers until you hear it "click". Tighten down until it stops, then go 1/2 to 3/4 more. If you take a bath towel, dont'use your wife's good one, and roll it up and lay it on top of the rockers, it will catch most of the oil that it sprays out. Then do the other side.
