Default Looking at new tires for the rear

Looking at the Mickey Thompson Et street radial 2 or Nitto nt 555r. Which one would be a better tire for handling some cornering.

Neither. Both are more drag oriented tires.
The regular Nitto NT555 or NT05 (not R) would be much more ideal for handling.

What are the options we have in a 305/ 35 /18 tire.

Not much, I see Toyo Proxes R888's.
I assume you have 18x10.5" Corvette wheels on the rear?
You can run 315/30/18s on those, that will give you a larger selection of tires.
Also check 295/35, 285/35, 285/40.
Things labeled "Drag radial" like the NT555R's, and MT Street Radial are not going to be good for handling.
While on the subject, match the front tires to the rear, having an overly sticky rear tire is only going to cause the car to understeer badly when pushed to the limit. The best setup for handling on these cars would be to run the same size on all four corners, the serious guys are running 315s on all fours.

Yes, as much as the staggered look is super popular around here, it is NOT the ticket to great handling/braking/turn-in/etc.
