What are you using for an oil pressure gauge, electric or mechanical? I would want to verify with a mechanical gauge before determining the issue internal.
Behind the rear engine cover (behind flex plate) there is a small plastic plug that goes into the oil galley. If this was left out during the overhaul, you'd loose oil pressure I belive. There should be a few posts about this if you search for it.

there's a port on the left cylinder bank at the back of the block, down where the "cylinder bore" part of the block case meets the bottom end holding the mains. If you pull that screw in plug, you can look up into the bore to see if the plastic dog bone plug is in place. Will save you pulling the transmission and rear cover to see if it is in place. If it's not there, that's the problem. If it is there, then you move onto the o ring on the pickup.

If this engine has set for any length of time as stated above It may just need to be primed. I pulled my used ls1 engine 3 times and replace the 0-ring 3 times and double bolted the tube and even rtv'd the oring and flange still no pressure. My problem was that the pump would not prime because it was dried out. I primed the pump and instant oil pressure on the gauge. Good luck. I'd prime the pump before I did any thing else might save you some work.

Remove the spark plugs and crank it over that way until you fix the oil pressure problem. I got good pressure while cranking without the worry of damage from running with no oil.

There are a couple of ways as I understand it but in my case I simply overfilled the crank case with cheap 5w30 oil (19 quarts) till it ran out the plug on the lower front drivers side of the block. That puts oil in the pump itself. I then spun the engine over with out starting it and had instant pressure on gauge. I then drained the oil out filled to normal level with the good stuff fired the engine and have 11 k on it sense the swap no issues. I have been told some one makes a priming kit but have never seen one personally. Some one else here stated they jack the rear of the car up to achieve the same thing without using as much cheap oil. Sounds reasonable but I have never tried it.
