Pull off the oil fill cap and see if there is oil on the rockers. You could also pull the rocker covers and check for oil up top. If you have oil go after the sending unit. If not check the oil pump O ring and pump.

I pulled the oil filter and its dry as a bone so I now know its either the pump or the o-ring.Is there a way to put on the head gaskets wrong as to cover the oil flow?

If the filter is dry you have pumping problems. What all was done to the engine during the swap?

Is the battery fully charged? Is the motor spinning pretty fast? Also, how long did the motor sit since it was last running?

I had to pack my pump with a little bit of lube to get suction so it would pull the oil out of the pan. And crank the motor fast until we seen oil up top.

You can pull all of the plugs, and spin it over. You should see pressure in a few seconds. Dont forget to pull your fuel pump fuse so as to not wash your rings...
