Made a plate out of plastic that matched the color perfectly, drilled a hole and kept enlarging it with a dremel until the gauge fit, anchored it with 3M double sided tape.

I made it out of the side of a plastic box. Already had the 'grain' llok to match. I've lost the reference but someone earlier posted a site that sells sheet plastic.

In https://ls1tech.com/forums/appearance-detailing/249110-tcs-convertible-switch-panel-part.html (blaSSt's thread), http://www.mcmaster.com/ is the website mentioned by LawmanSS as selling "textured black ABS plastic" sheets

question BlaSSt?... how did you get the outter rings around your guages, to match the plastic you used... is that part of the materials you used, or is it different?

They are the rings that come with the Phantom gauges. Worked out nicely.
